Ingredients


  • 4 parsnips, peeled and cut into sticks

  • 1 tablespoon olive oil (optional; substitute with water if preferred)


Glaze


  • 2 tablespoons balsamic vinegar

  • 1 tablespoon miso paste (white or yellow)

  • 1 tablespoon maple syrup

  • 1-2 tablespoons water (to thin if needed)

  • Salt and pepper to taste

  • 1/2 teaspoon powdered sage


Instructions


  1. Preheat Oven: Begin by preheating your oven to 200°C (400°F). This ensures that your oven is hot enough to properly roast the parsnips, giving them a nice, caramelized exterior.


  2. Prepare Parsnips: Wash and peel (optional) parsnips. Cut into smaller pieces. Place the peeled and cut parsnip sticks into a large mixing bowl. Drizzle with 1 tablespoon of olive oil (or water if you prefer a lighter option). Sprinkle with salt, pepper, and 1/2 teaspoon of powdered sage. Toss the parsnips in the bowl until they are evenly coated with the oil and seasoning. This step helps the parsnips to develop a flavorful crust as they roast.


  3. Roast: Spread the seasoned parsnips in a single layer on a baking sheet lined with parchment paper or lightly greased to prevent sticking. Make sure the parsnips are not overcrowded; this allows them to roast evenly. Place the baking sheet in the preheated oven and roast for 20 minutes. After 10 minutes, flip the parsnips to ensure they roast evenly on all sides.


  4. Make the Glaze: While the parsnips are roasting, prepare the miso glaze. In a small mixing bowl, whisk together 2 tablespoons of balsamic vinegar, 1 tablespoon of miso paste, and 1 tablespoon of maple syrup until the mixture is smooth. Add 1-2 tablespoons of water, one tablespoon at a time, to thin the glaze to your desired consistency. The glaze should be thick enough to coat the parsnips but not too runny.


  5. Glaze and Finish Roasting: After the initial 20 minutes of roasting, remove the parsnips from the oven. Pour the miso glaze over the parsnips and toss them on the baking sheet to ensure they are fully coated.


  6. Return to Baking: Continue roasting for another 10-15 minutes. During this time, the glaze will caramelize, giving the parsnips a rich, deep flavour. The parsnips are done when they are tender on the inside and slightly crispy on the edges.


  7. Serve: Once done, remove the parsnips from the oven and transfer them to a serving platter. These miso-glazed roasted parsnips make a perfect side dish for any meal.
